Grilled Sweet Potatoes
Sweet potatoes are so amazing, aren’t they? They’re delicious,
chock-full of vitamins and minerals, and much lower in starch than their
white potato cousins. Sweet potatoes contain vitamin
A (beta-carotene), vitamin C, manganese, copper, pantothenic acid,
vitamin B6, potassium, dietary fiber, niacin, vitamin B1, vitamin B2,
and phosphorus. They can be used for breakfast (sweet potato hash,
anyone?), lunch (sweet potato chips, duh), dinner (grilled sweet potatoes, of course) and even dessert (sweet potato pie. Never had it? Getcha some!)
So as you may know, I don’t do complicated recipes. Therefore, this recipe is so simple that a 5-year-old could make it.
But don’t let your 5-year-old use the grill. They’re easily distracted and will probably burn dinner.
And yes, that’s the same reason I need simple recipes. I will also get easily distracted and burn dinner.
Sigh….
GRILLED SWEET POTATOES:
- 1-2 large sweet potatoes
- 4 tbsp avocodo oil (or olive oil)
- 2 tbsp garlic powder
- 2 tbsp paprika (omit if AIP)
- salt & pepper to taste
Fire
up that grill to medium heat, and then let it warm up for a few
minutes. Slice the sweet potatoes into 1/4 inch slices, and put them
into a big ziploc bag. Add the oil and spices and shake it well to coat
the sweet potatoes.
Once the grill is warm, put the sweet potato
slices on it in a single layer, and let them cook about 5-7 minutes per
side. If the slices are thicker, then let them cook slightly longer,
just keep an eye on them. Grilled sweet potatoes should be slightly
crisp on the outside, but still a little soft in the middle.
